Quick Fish Meal:For a single serving, dip about 1/4 pound of tilapia or filet of sole in one beaten egg. Remove from egg and allow excess to drip off. Dredge fish in about 1/4 cup almond meal seasoned with 1/4 teaspoon salt and a bit of pepper.

 
Cook fish in a tablespoon of melted coconut oil over medium high heat for about two minutes per side, depending on the thickness of your filets. Fish should flake easily when it is cooked.
