These French Toast Sticks are a great Kaufmann 1 snack or morning dish. The bread used for this recipe can be referenced in our Everyday Bread Recipe here. This recipe will yield about 3-4 servings.
5 slices of Everyday Bread cut into sticks.
2-½ tbsp. coconut oil
3 large eggs
1/3 cup almond milk
2 tsp. vanilla extract
½ tbsp. cinnamon (plus extra for sprinkling over French toast sticks)
Xylitol for sprinkling
Maple Syrup (optional for dipping, if using recipe becomes Kaufmann 2)
Slice and cut bread into sticks and set aside.
Heat medium skillet over medium high heat, and melt coconut oil. (Make sure there is enough oil to fully cover skillet)
Whisk eggs, almond milk, vanilla, and cinnamon together until combined.
Using your fingers or a fork, dip the sticks into egg mixture. Flip a few times, and let excess run off, and put into hot oil. Cook until golden brown.
Sprinkle with cinnamon and xylitol and enjoy.
