Ingredients:
4 egg whites
¼ tsp salt
⅓ cup monk fruit sweetener (or xylitol)
10 drops vanilla stevia liquid
3 cups unsweetened coconut flakes
1 Tbsp coconut flour
Directions:
Preheat oven to 350℉.
Whisk egg whites and salt with a mixer until foamy, add sweetener and mix until white, shiny and soft peaks form. put stevia drops on top. Add coconut flakes and coconut flour and fold until evenly combined.
Line a baking sheet with parchment paper.
Scoop spoonfuls onto baking sheet.
Bake for 15 to 20 minutes, until tops and edges start to brown.
Cool completely on sheet.
