Clean Salad, Kaufmann 1 Style


Mixed salad greens and herbs (baby lettuces, spinach, arugula, parsley, basil etc., whatever you like) about 2 cups

1/4 cup red bell pepper, cut into bite-sized pieces

1/4 cup sweet red onion, thinly sliced

1/4 cup cucumber, sliced 

a handful of cherry tomatoes

1/4 to 1/2 of a medium avocado

8-10 olives, black or green


2 teaspoons olive oil 

1-2 teaspoons lemon juice

salt and pepper to taste

Mix salad greens and next 6 ingredients in a fairly large bowl. Drizzle with olive oil, squeeze some fresh lemon juice over, and sprinkle with sea salt and a grind of pepper. Toss well. 

Add to this salad your favorite protein. Some choices might include:

4-6 ounces canned wild caught salmon

2 hard boiled eggs

4-6 ounces left over grilled chicken or beef

4-6 ounces thinly sliced cooked leg of lamb

4-6 ounces freshly cooked ground beef or ground turkey
