Broccoli Cheddar Oatmeal

kaufmann-2-microThis Kaufmann 2 diet friendly Broccoli Cheddar Oatmeal makes about 2 servings.

Ingredients:

4 cups chicken broth
1 cup steel-cut oats
2 tsp minced garlic
2 Tbsp olive oil
1 cup broccoli florets
1 cup cubed carrots
½ cup chopped yellow onion
1 cup shredded cheddar cheese
Salt and Pepper to taste

 

Directions:

Add chicken broth to a medium sauce pan and bring to a boil.

Add oats and garlic, stir.  Cover and cook over medium-low heat for 30 minutes, stirring occasionally until oats are tender and broth has thickened.

While oats are cooking, heat oil in a medium sized skillet on medium high heat.

Add broccoli, carrots, and onion.  Cook until vegetables are crisp tender.

Stir cheese into oats until melted.  Add broccoli mixture and combine.

Season with salt and pepper then serve.
