kaufmann-2-microThis Kaufmann 2 Italian Pasta Salad recipe makes a lot of pasta salad and is great for a party! Feel free to cut the recipe in half for a smaller portion. Also, don’t be afraid to add other veggies or protein. Some examples are shredded carrots, cucumber, and diced chicken.

Ingredients:

1-cup olive oil
¼ cup apple cider Vinegar
2-½ tbsp. lemon juice
3 tbsp. italian seasoning
½ tbsp. garlic powder
½ tbsp. onion powder
½ tsp. pepper
2 tsp. xylitol
½ tsp. salt
¼ cup shredded pecorino parmesan (pecorino is made from sheep’s milk)
16 oz. cooked lentil rotini pasta
1 red pepper diced
1 green pepper diced
1 small red onion diced
1 can (6.5 oz.) sliced black olives, rinsed
1 pint grape tomatoes halved

 

Directions:

 

Dressing: In a small bowl, mix olive oil, apple cider vinegar, lemon juice, seasonings, and shredded pecorino. Set aside in the refrigerator.

 

Pasta: Cook pasta according to directions on the box or bag. Do not over cook pasta. Once cooked, remove from heat and rinse pasta with cold water in colander. Set aside and let pasta drain.

In a large bowl (with a lid) add pasta, red pepper, green pepper, red onion, tomatoes, and olives. Mix and pour the dressing over pasta. Put the lid on the bowl, and gently toss to coat pasta with dressing. Enjoy your Kaufmann 2 Italian Pasta Salad!
