This Kaufmann 1 Red Cabbage recipe will make about 6 to 8 servings.

Kaufmann One

 

 

 

Ingredients:

2 Tbsp olive oil
1 medium onion (halved & thinly sliced)
1 medium green apple (cored, halved & thinly sliced)
1 head of red cabbage (thinly sliced)
⅓ cup sweetener (Monk Fruit or Xylitol)
⅓ cup apple cider vinegar
¾ tsp salt
¼ tsp pepper  

 

Directions:

In a large sauce pan or Dutch oven, heat oil; sauté onion and apple until tender, about 5 minutes.  Add cabbage, sweetener, vinegar, salt and pepper.  Bring to a simmer.  Cover and cook for about 1 hour, stirring occasionally.

The thicker the slices of cabbage, the more crunch it will retain after cooking.  If you want it to be softer, like sauerkraut, slice the cabbage extra thin. 

Can be served hot or cold
