
Makes 4 Servings
Ingredients: ¼ cup apple cider vinegar 2 Tbsp avocado oil 2 Tbsp honey ¼ tsp salt 2 cucumbers (thinly sliced) ¼ to ½ red onion (thinly sliced) 3 Tbsp fresh chopped herbs (dill, parsley or basil)
Directions: In a large bowl, whisk together the apple cider vinegar, avocado oil, honey, and salt until combined.
Add the cucumbers, onion and fresh herbs then toss.
Refrigerate, covered, before serving.
