Tabouleh
2 cups quinoa, cooked according to package directions
1 cup chopped Italian parsley
1 cup chopped mint
1 cup chopped green onions
½ cup chopped cucumbers
½ cup diced tomatoes
¼ cup olive oil
¼ cup lemon juice
1 ½ tsp. salt
IN a large bowl mix together quinoa, parsley, mint, green onions, cucumbers, and tomatoes. Add olive oil, lemon juice, and salt. Mix thoroughly to combine. Can be served chilled or at room temperature.
