Molds (fungi) grow in almost all indoor and outdoor environments where they have a source of water. Molds are found in water, in the air, in and on plants and animals, in and under soil, and in all kinds of surfaces indoors. Mold can use almost anything which contains carbon as a food source, including carpeting, drywall, wood, decaying food and vegetation, and even crude oil!

Happy 2010!

This morning when you woke up, you found yourself in a different world than when you were born – no matter how old you are. The conveniences that are available to you today are better than they were yesterday. For example, when I was growing up, if you got a Christmas gift that required batteries and you didn’t have any around the house, you had to wait another day before you could use that gift because no stores were open on holidays. Today, not only can you go get batteries 24 hours a day – regardless of the holiday – you can also go to a movie, have a meal at a restaurant, or maybe even do some banking. Nothing ever shuts down and, as a result, neither do our appetites to consume.

Dear Readers,

My resolution for this year includes “getting healthier.” For some “getting healthier” may mean losing a few pounds, changing your eating habits and starting to exercise. There is a growing epidemic of obesity in this country (no pun intended). The best medicine is not medicine at all but a healthy lifestyle. It is a fact that it is easier to prevent disease than it is to cure it. This brings us to this month’s case study.

The US is now facing concerns about the H1N1 flu epidemic. In 2009, about 10,000 US citizens have died of this flu- including about 1,000 children. Much of the world has been severely affected by the AIDS/HIV epidemic over the past 29 years. However, 3 more prevalent epidemics facing the US and other developed nations include the interrelated problems of obesity, type 2 diabetes and mold related health problems.

  1. 6 eggs, beaten
  2. 2/3 cup almond milk
  3. 1 green onion, sliced
  4. 3 slices of bacon, cooked and crumbled
  5. 1-tablespoon butter
  6. ¼ teaspoon salt
  7. 1/8-teaspoon pepper

Beat milk and eggs together. Stir in spices, onion, and bacon.
Melt butter in a 9-inch frying pan. Pour in egg mixture and bake at 400 degrees for 20 minutes, or until set and golden. Garnish with additional bacon, if desired.
