Yogurt-Marinated Butterflied Chicken

For a chicken that cooks quickly and evenly, all you really have to do is to remove the backbone and break the breastbone.

  1. 6 eggs, beaten
  2. 2/3 cup almond milk
  3. 1 green onion, sliced
  4. 3 slices of bacon, cooked and crumbled
  5. 1-tablespoon butter
  6. ¼ teaspoon salt
  7. 1/8-teaspoon pepper

Beat milk and eggs together. Stir in spices, onion, and bacon.
Melt butter in a 9-inch frying pan. Pour in egg mixture and bake at 400 degrees for 20 minutes, or until set and golden. Garnish with additional bacon, if desired.
